BLT Casserole Recpe – Yummy!

Who doesn’t love bacon, right? Homer best said it:

“(Lisa) “I’m going to become a vegetarian” (Homer) “Does that mean you’re not going to eat any pork?” “Yes” “Bacon?” “Yes Dad” Ham?” “Dad all those meats come from the same animal” “Right Lisa, some wonderful, magical animal!””

The following recipe is so yummy and makes for a really filling and tasty brunch. Please note that I did NOT say it was healthy, probably part of the reason it tastes so darn good.


Ok this one is pretty easy and you’ll have it cooking in under 15 minutes.

  1. Toast the bread slices. Spread mayo on one side of each slice of  toast, then cut in to pieces. Arrange toast pieces, mayo side up, in a greased baking dish. Top with cheese slides and bacon crumbles.
  2. In a large skillet, fry eggs until completely set. Place these over the bacon in the baking dish. Top with tomato slices, set dish aside.
  3. In a small pan, melt butter. Stir in four, salt, and pepper and whisk until smooth. Gradually add milk to the saucepan, while stirring. Bring to a boil, cook and stir for 2 minutes until it has thickened. Pour this over the tomato. Sprinkle with cheddar cheese and onions.
  4. Bake uncovered at 325′ for 10 minutes. Cut into squares, serve with lettuce.
