Grilled Asparagus Sandwiches
I saw this recipe floating around several times in Pinterest and I couldn’t resist trying it The end result was amazing – this is a keeper in our recipe box now. Really great for a quick dinner after work, too
To get started, prepare your bbq grill 🙂
Use a skewer to secure the asparagus so they are easy to turn on the grill. Like so:
Drizzle oil over them – both sides.
Put them on the grill approx 3 minutes each side and they are ready when they are softened.
To assemble the sandwiches, smear with french mustard, a little olive oil. Top with asparagus, sliced egg, red onion slices, sprinkle of fresh dill, and spray a little lemon all over the interior of the sandwich. Season with salt and pepper.
These tasted really great, so much so that even my other half would eat them again. And there was NO meat! 🙂
