Hint of Lime Vegetable + Fruit Skewers
This is an easy (and healthy) recipe with next to no fat, carbs, or sugars. It’s great for anyone on a healthy diet looking for vegetarian / low calorie alternatives.
So, fire up that grill and let’s get this party started!
Soak bamboo skewers in cold water for 30 minutes. Skip this step if you’re using metal skewers.
Place vegetables on skewers alternating colors and shapes. Whole button mushroom > square of pepper > square of fresh pineappl > etc.
Drizzle olive oil over the skewers, then squeeze the lime juice all over them.
Heat grill to medium high. Brush grill well, then wipe with oiled paper towel.
Place vegetable skewers on grill and cook a total of 8-10 minutes to desired doneness, turning occasionally.
Remove from grill and serve.
